Chocolate muffins covered with brazilian fudge (brigadeiro)
For muffins:
(makes 12)
200gr flour
100gr caster sugar
2tsp baking powder
50gr cocoa powder
70gr chopped dark chocolate
2 eggs
100ml vegetable oil
250ml milk
Preheat oven to 200˚C (mine is electric so I preheat to 180˚C)
Add dry ingredients in a bowl.
Whisk wet ingredients in a separate bowl,
Now add wet to dry ingredients until just combined, don't overwork it.
Spoon into a 12 hole muffin tray lined with paper muffin cases.
Bake for 20 min.
For fudge (Brigadeiro):
1 can condensed milk
3 tbsp powdered cocoa
1tbsp of butter
In a medium saucepan over medium heat, combine condensed milk, cocoa and butter.
Cook, stirring until thickened, for about 10 minutes.
Remove from heat and let it cool.
When cool but still soft enough, cover muffins and finish with some chocolate sprinkles.
